Plumcake is a simple sweet scented with lemon, which is appreciated by young and old. Perfect for breakfast or snack, if accompanied by a tea or your favorite drink.

Ingredients

  • 150 g Flour
  • 15 g Soft butter
  • 4 Eggs at room temperature
  • 85 gr White Chocolate
  • 130 gr Sugar
  • 20 gr Honey
  • 15 g Lemon juice
  • 10 g Lemon zest
  • 6 g Baking powder for sweets
  • 2 g Salt up
For Crispy Icing:
  • 100 g Icing sugar
  • 25 gr Water

Lemon

Aromatic, sour and with a strong flavor, this fruit is one of the most used ingredients in the kitchen.

Preparation

Step 1
To make plumcake with lemon and white chocolate, in a mixer we must add our ingredients starting with flour, eggs at room temperature, sugar, white chocolate, softened butter always at room temperature, honey, yeast, salt, lemon zest and our juice, I used a medium lemon.
Mix it all up.
Step 2
Next, prepare the mold and incorporate the mixture. In a bowl with a little butter soak the tarocco by placing it in the center to create a cut. 
The cut in the center helps to grow the Plumcake in the center.
Step 3

In a static oven, bake the lemon Plumcake at 185 °C for 15 minutes and then at 165 °C for 30 minutes.

You don't have to pull out the lemon Plumcake, just lower the temperature.

Step 4 – For Crispy Icing

In a bowl, add the icing sugar and then pour the water. Mix everything with a whisk. With the help of a brush distribute the glaze over the Plumcake with lemon and white chocolate.

Bake at 250°C degrees for 5 minutes

Conservation
  • Lemon Plumcake can be stored at room temperature, covered, maximum one week. 
  • If you wish you can also freeze it for 1 month
  • crispy icing makes plumcake with lemon crispy and waterproof, this way it will preserve longer and remain softer.
